Wicked Baked Chiken Wings

Wings are a favourite in my place but I don't like deep frying in my flat so I've been experimenting with baked wings. After reading a recipe + comments  I did my take on them

  • 6 tablespoons olive oil
  • cloves garlic, pressed
  • 2 teaspoons chili powder
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon ancho chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon thyme
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1/2 tablespoon salt
  • 1 tablespoon ponzu
  • 1 tablespoon pomegranate molasses
  • 2 tablespoons chilli sauce (franks redhot, valentina, etc)
  • 3 lbs chicken wings

  1. Mix all the ingredients in a large resealable bag and let marinade for a few hours to overnight
  2. Place parchment lined baking sheets of wings into a pre-heated 375F oven for 50 to 60 minutes ( until cooked through)
You can adjust things to your preferences, but this took me a couple of passes to get these.  I could make them spicier but not everyone in the group has my passion for spice, so these are a nice flavourful compromise.

More Later ....
